: would this marinade be any good?
offroadr35 02-25-2003, 04:53 PM ok i bought some sirloins today and thought i had lots more stuff at my house than i actually do. all i really have to marinade with is worcheshier (sp?) sauce, frank's red hot sauce, and beer. I have some spices too. What would you guys do?

xjpart2 02-25-2003, 04:59 PM i did some killer ribeyes this summer using cheap italian dressing, worstechier, a little soy, some olive oil, garlic powder, fresh ground black pepper, a touch of sea salt, a little old bay, a touch of ginger, a little paparika, and bourbon. let it marinade for a few days.

TexasBlake 02-25-2003, 05:08 PM my favorite for steaks is half worscheshire sauce, half mesquite BBQ sauce from the store, a splash of Wild Turkey, and a few sprinkles of my rub. They I put it in a bowel, and sprinkle my rub on it. I cooked a few weeks ago and posted the pics on here, look for a post called "hungry biotches".

rugburn 02-25-2003, 06:31 PM Best marinade I have used, and recommend to everyone when they cream their jeans eating at my house or campsite is soy sauce and Tony Chachere Creole seasoning.
Season to your taste, but damn, it's perfect.
Pork, chicken, lamb, turtle, the combo can't be beat.
For fish, olive oil and Tony Chachere before cooking.
For smoking pork shoulders or boston butts, Tony Chachere, freshly ground black pepper, and some brown sugar as a dry rub. allow to fester overnight and then low and slow over smoldering hardwoods and Kingsford charcoal.
For steaks, salt, pepper and a touch of olive oil, let the cut of beef do the talking.

Out of the ingredients you mentioned, Worchestershire sauce will marinate better when you're pressed for time. The other stuff is good marinade, but will just run off unless you use a vacumn or let em sit for hours.
Also, you can just let the steak sit on the counter for an hour and warm up first. Makes a big difference even if it's not aged.
Not an expert like some on this board, but when it comes to last-minute cooking I'm pretty good and got a few tricks.

I haven't tried Blakes BBQ rub, but I've used some other rubs and I'm a firm believer; certainly cuts the prep/wait time when grilling beef, chicken, pork, or fish.

lt1yj 02-26-2003, 07:13 AM I use Worcestershire and Kraft Zesty Italian salad dressing in about a 50/50 mix. Fork the steak (or chicken) and let sit overnight. On occasion I'll mix in beer too. I think it mellows the flavor of steak a little.
Personally, I'd skip the hot sauce but I'm not into spicy foods.

Ten dash four on that. Also, it's good to let the meat 'rest' for a while when it comes off the grill before cutting or piercing it. Let's the juices settle rather than pouring out when cut. Much mo bettah.
