This yoke came as part of a used RE hack and tap kit (for a 231 case) I bought from a 4x4 store online. Not sure what it's made of other than it's not aluminum (too heavy).

Should the middle piece be welded like that? never noticed that before, and it shouldn't be a big deal since all it does is hold the yoke on the t-case shaft. there does not appear to be any means of holding this piece on otherwise, as in there's no groove for a snap ring (like the RE's current flange uses)

It doesn't ever have much of a load put on it, just the driveshaft compressing and extending. Even if it did break, the yoke splines would keep it from coming off, and it could only slide about 1/4 of an inch more on the T-case shaft

They are made of steel.

Yes, that is how RE make these yokes, by welding a washer in the middle of the yoke. The should not be any real load on it, and even if there was, the washer keeps the yoke "trapped" in place. So even if the weld were to break, as long as the bolt is in place, the yoke will stay put.
When I was young and dumb, and did my RE hack and tap, I used a Heli coil in the output shaft, and lots of red lock tight on the bolt to make sure it was not coming loose.

So this just an old version of the RE hack and tap?.

I figured it was steel, I was more meaning stainless steel, or some steel alloy or plain steel or nickel or zinc or titanium etc... because it's not rusty in anyway, but some of the misc. bolts that came with it are

Yep, thats all they did.

The yoke has a coating on it to keep it shiny. Chrome, zinc plated, anodized, I don't know.

It looks like an actual dana/spicer yoke judging by the stamp on the bottom of the right of the yoke. I've never heard of the RE hack and tap for the 231. What's the low down?
