Anyone know where to get them with the little red cover for a reasonable price? I want to go ahead with the 'cutting brakes' but want to put the toggle switches on the dash. I obviously don't want them turned on by accident, and I still would like them to be splash proofed.
I looked this AM online, but no luck. McMaster has locking ones, for like $60.

Summit sells the red flip up guard for like $7. You will have to supply the environmental switch.

The problem I've found, and I admit my research is limited, is that the cover has that foot in it to keep it vertical. Do most switches have that groove in the threads?

Yes, most switches do have that groove.

Look at painless wiring's site. Im pretty sure they are the ones that have some trick switch

Yes, 80521 is the Painless part number for the cover. (I just got an email back from them.)
I think I'll go with Brad's switches AND some of those little toggle condom's from McMaster, just in case. :D

install a cut-off switch so they cant' be turned on by accident. Did this with my in-cab winch remote switch.
