My gf is coming to stay with me for a couple of nights and I thought I'd cook her dinner one night. I need a good simple recipe, preferably chicken (got some in the freezer ;) ). Maybe Chicken Paremesean?

Buy a box of stovetop and make the chicken bake following the directions on the box. It's pretty good and super easy to make (dump all ingredients in 1 dish, cook for 40 mins or so). Break out the white wine if she's the wine type :)

Ahhhh, yes. Nothing says "I care" like a .45 cent box of stove top stuffing. I'm not saying it's not good, 'cause it is, but dude, c'mon "flipoff2:

Stove Top and Mad Dog 20/20. Doesn't get any better than that :D

He did say he wanted something simple. It really doesnt get much easier. And she doesnt need to know its Stovetop in there. Its not like its just a $0.45 box of StoveTop.

Hell if he needed something really easy I would have suggested the box of Kraft Mac and Cheese!

I think you're along the right lines with chicken parm. Easy and almost seems difficult, but you don't have to measure a damned thing.

Get 2+ deboned chicken breasts. Dredge them in a mixture of lightly seasoned flour (basil, oregano, salt, pepper). Fry in olive oil until browned. Cover with your marinara of choice and mozzarella and bake at about 375 for half an hour. Bubble up some spaghetti and serve the whole mess with a near caesar salad (leaf spinch and lettuce with whatever store-brand caesar you can nab) and some hoagie rolls toasted with butter and garlic.

I was a college "gourmet" with this recipe, and made many many fine young ladies too fat to want to sleep with anymore

Go get a bottle of wine, zinfandel or Chablis – something to your tastes and goes with chicken.
Get fresh onions, peppers (green, red, banana), yellow squash, zukini, a jar of tomato basil spaghetti sauce, angel hair noodles, two slices of provolone cheese sliced medium to thick, and something for dessert.
Chill wine.
Cut chicken into strips or chunks and sautee in pan, you can boil it, but that takes some of the flavor.
Sautee the vegetables on high heat with very little oil (I prefer olive oil), just enough to keep them from scorching, add garlic and other spices (red pepper, black pepper).
Once the chicken and vegetables are done drain oil and add all into one pan. Add 1/3 to ½ the jar of spaghetti sauce into this pan, cover and simmer.
Boil noodles.
Prepare table.
Once the noodles are done, drain and prepare a bed of noodles on each plate.
Add remaining 2/3 to ½ jar of spaghetti sauce to pan stir and quickly place over bed of noodles.
Place slice of provolone on top and pop in oven turn onto broil and melt the cheese.
Serve as soon as cheese is melted.
(you can leave the chicken completely out for a lighter vegetable meal, or my favorite use steak instead of chicken)

Make her some cum-dumpster surprise. Take 2 chicken breasts and lay them in a glass pan. Cover with one can of cream of mushroom soup, one can of cream of chicken soup, and one package of grated cheese (your preference). Cook at 350 for about 45 minutes. Tastes great!! Just kinda looks like bukkake:barf:
