Had some venison steaks, and sweet corn last night. The venison was marinated in Italian dressing, then grilled for 8-10min.

Whats other good ways to cook giant horned rat?

Mix up a little dijon mustard, salt, fresh cracked pepper, and wine. Dip slunks of dead animal in mixture, then dredge through flour, and fry in shallow oil. :D Good stuff.

cut in bite-sized pieces, marinate in milk overnight, wrap each piece in a strip of green chile, put a toothpick through it, and BBQ that baby. Out-standing! :D

Curious Bob, you ever try saoking it in buttermilk as opposed to regular??? Seems to work a little better I think.

Hey Lamers!

You're in Minnesota - you got any Hutterite Colonies near you?

At the Colonies around Huron, and Vienna, South Dakota, they make Chislick (sp?) out of it. They cut it up, season it, and deep-fry it. Damn, that stuff is good! Them Colony people eat good!

Yup, same with burgers but the problem is the meat is so lean it's pretty dry by itself. We usually mix ground venison with pork for use with burgers or meatloaf. Best stuff I had was at my uncle's he mixed it about 2 pounds venison with 1 lb pork, added a bunch of other stuff like crackers, eggs, onions, green peppers, seasoning then laid strips of bacon across the top of it to keep it from drying out.

for a shoulder:

Marinate in red wine and minced garlic, then smoke it for 5-6 hours.

Any marinade that involves Kiwi, natural tenderizer. 'Bout ten minutes only, or you';ll end up with mush!

Any rub or spicing that involves thyme. When it comes to ANY kind of game, Thyme is your friend.

So I do vinegar, oil, kiwi, garlic marinade with the vacumn sealer. Then I rub black pepper, Kosher salt, and Thyme, grill. That simple. Will completely change the character of the meat if you have one who doesn't like venison.

Personall, I can take it fresh over the grill with no spices at all. I like it that way unless it's a swamp whitetail or a mule deer.
