So when I bought my CJ7, it already had the Superwinch hubs swapped in. I broke one on the second wheeling trip, now I'd like to switch to the Warn Premiums with hub fuses.

So do I just buy the hubs ($100) or the whole "conversion kit" ($250) ?

Get the conversion kit. You will have nothing but trouble with the 5 bolt style hubs.

Go with the warn hub conversion kit. Much stronger and easier to maintain (no more tightening loose bolts). I've actually got a used warn hub conversion kit if interested.
