(oh and mom made it with tomato sauce on top and as extra topping...so get it right :flipoff2: )

We've done this twice in the past few months. Last time like 6 weeks ago I think.

1 egg
handfull of saltines or oatmeal
worsterschire
rosemary, thyme, oregano
handfull of shredded cheese if you like.

squish it all together with your hands :D

ketchup on the top.

1 hr @ 350

Turkey-loaf! lean, healthy alterative!

Rita makes a mean one. Its got egg WHITES, corn flakes (healthier) celery, bell pepper, onion, and a ton of great veggies in it. add a touch of horseradish sause and its a homer!

I love my meatloaf. Simple and quick.

1 part sausage (sweet, spicy, plain)
1 part ground beef
1 part ground pork
Saltines, dried bread, about 1-2cups
2-4 eggs
Worcestershire sauce
1/2 - 1 c chopped onions
" " sliced mushrooms
" " sliced celery
A little sage, little tyme, whateva

Mix it, put it in a pan and cook at 350 for 1.5 hours. You can shape it like a big vay nay nay if you desire.

Sauce: 1 cups brown sugar, 1 cup ketchup, smidgen of vinegar (cider, red wine, balsamic) Glaze the raw meat before cooking, glaze again when 30 minutes are left on the timer.

Meat loaf is pretty straight forward. Here are a few "tips" for making a good one

1. Whatever you do...do not cook it in a loaf pan. Cooking it in a loaf pan just allows it to wallow in it's own fat making it greasy. I'm sure a lot of people will argue this but trust me, just form it on a baking sheet where the fat can run out of it.

2. Fresh bread crumbs or oatmeal for filler. Stay away from crackers or old bread crumbs. I like to take a couple of slices of fresh bread, soak them in some milk for 10 minutes, squeeze out most of the milk and add them to the meat loaf.

3. Use various types of meat. It will add a depth of flavor. As example use a pound of lean beef, a pound of lean pork, and a pound of ground turkey. It costs a bit more but you get a much tastier loaf in the end.

4. If you like to add veggies (carrots, onions, celery, peppers, etc) throw them in a pan and cook them first. I like to cook them until they are nice a golden brown and then add them.... again carmelized natural sugars means lots of flavor.

5 . What ever you do.... don't over cook it. Pull it out 10 degrees or so before it's done and let it sit for 20 minutes... it will finish cooking while it's sitting there and will be tender and juicy.

Mom?? Is that you??? :D

Just called her to ask about the tomato gravy..her secret is tomato soup...she pours some undiluted on top for baking and then for gravy she takes loaf off pan and pours rest of soup undiluted in with drippings. Yep..she uses the bread in milk, she never had the oatmeal

2 parts ground beef
1 part ground pork
1 part ground veal
bread crumbs
beaten egg(s)
chopped onions (sauted)
catsup
salt
pepper
Lea & Perrins
garlic
1 Linguisa sausage

Mix all ingredients except the Linguisa in a bowl.
Form the meatloaf with the Linguisa in the middle.
Bake til done.
