I've read up on converting my '93 RR LWB to non-ABS using Girling parts from an '89. Are all these fittings metric or not?

Also, will the breaking performance be noticeably less than the ABS on such a truck? It's been a long while since I drove a RR without ABS so memory fails me.

Yes they are Metric. On my 87 there is a sticker on the vacume booster that says all threads are metric.

as compared to a friends similary set up '87, you will feel like you have a lot less pedal. on 32's it still seemed to do the job well enough offroad, with the usual bolt-ons, winch etc.
