I'm thinking about using a set of coil overs with about 14 to 16 inches of travel for my sammi. What would be a good choice of shock?

If you are going coils, go Rancho 9012. They are long and have plenty of travel, as well as you can dial your ride from super stiff to lot's of flex...
I have a set. They are amazing.

I am almost done with my coil conversion and I think I am leaning to Billstein 5100's. The rancho 9012's are roughly the same price, but I think that the billsteins should last a bit longer.

But, if you are looking for some good coilovers(sorry didn't read post fully) I would either go with king's or Billsteins. Billstein is coming out with a cheaper rockcrawler coilover, so you might wan't to check into that. I think they are in the $400 range vs. $500+

Yeah, Bilstein is coming out with a new Coilover shock the 9100RCS, I think it's called. There was a blurb on them in one of this month's 4x4 mags (It was either 4WOR, 4WD&SU, or 4Wheeler - those are the one's I get, and it was in one of them) toward the front where the mention breif blurbs on new products.

Apparently by using forged tubes instead of CNC machined stuff, they can make a shock that's a lot cheaper, and will serve you just fine unless you plan on doing prerunner type stuff for extended periods of time. And they run ~$400 from what they said.

And they're revalveable and rebuildable too.

Here's another option for you. Find Marvin Shaw ent. on the web. He's a hot-rod and shiny buggy guy that deals with cool stuff. He has nitrogen charged(no coils) shocks that are even highly polished chrome(for those that give a rat's...) with 14+ inches of travel for around $330 a piece. Cheap AND shiny! You can adjust height and ride quality with a little assistance from your local circle track boys. Might be worth checking out?

is that the set up Randy Ellis uses on his ride. I had heard he runs something like 300 psi in the shocks.

Was anyone able to find any info on these shocks? I searched, but didn't find antyhing.

Found marvin's web site on the nitrogen filled shocks. He e-mailed and said that his 14" shocks could hold up to 2000 lbs per shock, all you have to do is adjust the nitrogen pressure for your ride. sounds pretty cool. he also has coil overs.
