Very good information.

I've actually never processed my own deer. Gut and skinned, yes. But I always thought the rest of the process was just too damn time consuming and I thought I would screw something up.

He makes it look sooooo damn easy though :D

Makes me want to go and get a couple of doe in our 2 week extended period in South Texas. That last part was making me hungry! :p

A buddy back east has a high pressure air tank and he just makes a slit in the top of the neck and sticks the hose inside the slit and hits it with about 250 psi, blows the skin right off the meat. Works for him at least.

Butchering is pretty simple to do. I've done deer, elk, antelope, pigs, etc... and I can do a deer in about 3-4 hr, elk take a bit longer. I just got a good meat grinder for christmas so now it's time for burgers and sausage. mmmmm :D

With all the hunting talk today, figured I'd bring this to the top. I still have it saved on my HD(leastwise I think its the right vid, can't view it- stoopid WMP).

Hope it helps someone butcher their deer this year. :)

This guy wrote a book years back on how to butcher a deer- with a stone blade.

From Field to Freezer is the name of the book. I'm not sure if he still sells it or not, but... he has a video.

The primitive skills books are great. This guy is a hippie-ish type but very skilled in the primitive stuff. :)

Cutting up a Deer is fairly simple after you have done it a few times.. Once you get it skinned and quartered you just have to cut it up in to the appropriate pieces.. You want to get most of the clear looking, filmy skin off of it.. If you run your fingers along the cuts of meat you will see most of it is kinda seperated so it makes it easy to get it cut up in to sections.. I have done hunreds of them over the years so I can do them pretty quick.. A couple of good knives is very important during the process or you will get frustrated before you get started.. I have seen to many butchers that rob people for part of their meat so I don't let anybody cut up mine except for me :D

I've cut up a lot of moose and make my own burger and sausages like chorizo and breakfast sausage. Sausages like polish I take in to have done. I've never cut up a deer though, looks pretty easy in comparison. How much boned out meat do you get off of an average sized white tail? Beween a moose and a caribou this year we put around 600# of meat in the freezer this year.

Just wanted to say Thanks, again.
Gun season just ended in Ohio and our deer camp (my garage) processed 6 deer last week using the methods in the video. Very easy and everyone was impressed with the results. Saved ourselves a bunch of money and we got a bunch of meat, too. I guess that you can learn how to do everything on PBB.
