which are actually 32'' in diameter?

Take your pick, the tire size calculator I found says it is 31.64".

I still can't relate to the metric sizes for 16" wheels either.

I have that size on the superduty and they measured at a 31

cheapo 285/75-16 WalMart "Liberator" All Terrains measure almost exactly 32" by my tape measure. They are awful in mud, but aren't too bad in the snow.

265-75-16 is classified as a 32" :)
They can vary slightly form manufacturer to manufacturer. Pick which ones you are looking at and go to their web sight - they'll typically have OD listed. Remember the measurements are mounted on the recommeded rim width and inflated to max rated pressure (inflation pressure varies by LT load range or P-metric size)
265/75R16 is "classified" as a 32 as mentioned above, which means it actually measures about 31". 255/85's & 285/75's are "classified" as 33's, meaning they spec out at about 32" ACTUAL diameter.
