I am changing the clutch out on my '73 cruiser with a 350 conversion which kit do I need? What about the throw out bearing and hub do I need a new hub or is the old one reusable?

It is hard to be specific without knowing what kind of tranny you have, but basically you need a Chevy pressure plate that matches the flywheel and a disk and T/O bearing that is appropriate to the tranny. If you don't have a GM tranny, you are not going to find a kit.

Ok thanks for the help but do I need to get a new hub for the toyota T/O bearing or will the old one come off?

If you have a Toyota T/O bearing, the bearing presses off and you reuse the hub. If you have a GM T/O bearing you just replace the whole shebang.
