Iv never worked on a bike but im pretty good with engines in general and I have all the tools I should need to do any kind of work... so my sv650s has about 800 miles on it and I have not done anything to it. When I bought it they told me I should bring it in at 700 for its first tune up.. Do they do anything other than change the oil and make sure nothing is leaking and everything is tight? Can I just do it myself?

Also does anyone know where I can get a Haynes or Chilton type thing for my bike?

If your capable of it do it yourself. That early service is to get your mind trained into bringing your bike to the dealer for service, i know this because i was the manager of a Yamaha dealership in the early nineties. You should go over every nut and bolt to make sure all are tight.
