I'm going to need to cut my EB's fiberglass fenders. Is there a certain way to do this so as not to splinter much? I'm thinking of just taping where i want to cut and cutting through the tape, any better way?

A cut off wheel on a 4.5" hand grinder works great! Use a dust mask or you will be coughing all night!
Like Old Scout said, the cutoff wheel should work well. You might also want to go beyond the dust mask if you're going to be spraying 'glas splinters everywhere. An old long sleeved shirt and some gloves make life nice, since you won't nearly as itchy from the thousands of splinters that will lodge in your skin.

Take a cold shower after, not hot. Cold shower will keep your pores tight and not let the fiberglass work into the skin.
You can buy a diamond tipped metal blade to fit in a 4.5" hand grinder. They are expensive but they cut really clean and don't wear out. Wear a good respirator and safety glasses, that dust gets everywhere!
