what material header gasket should we use to help seal the best?

They build up the area around the ports and bolt holes with weld, then they machine it to a fine sheen. A little Ultra Black and you're good to go. I think they can get away with this because they use a really thick flange. 3/8-inch in the case of the Sandersen headers that I got.
