Depends on my mood and the trail. I hate doing dishes and hitting the trail in the morning, so it's usually muffins and stuff. Lunch is salami, pepperoni, cheese, crackers, mustard, anything quick and fast. Dinner is anything from soup to ribs or steak, depends on my mood. Beer is the ultimate food anyway, generally planned at 1 case per day :D:D:D:D.

Anyway, grill, beer, chicken!!! Drink 1/4 of the can of beer, put in a glug of liquid smoke, put the beer on the grill, set the WHOLE chicken on top of the beer(this is real entertaining if ya haven't seen it before)!!!
After the chicken has cooked for about 45 minutes on low heat start basting it will BBG sauce of choice. cook it another 45 min or 6 pack, which ever comes first then enjoy. BEST chicken you will ever eat!!!!!!!!!!!!!!!

For dinner you can always whip up a batch of chili or stew sometime during the week before and stick it in the freezer.

Just pack it up with ice and its good for the weekend. Just heat it up on a camp stove. Pretty easy, not too much mess.

When my whole club goes out, we arrange it so each couple brings food for everyone for one dinner, it works out pretty well. Then just bring a loaf of bread, some salami, cheese, mustard, hotdogs, beer, chips, beer, Jagermeister, beer, repeat as needed. Sometimes we buy a turkey, and throw it in the deep fryer kettle, mmmmm turkey! :D

Of course, we always have a base camp with power, water, etc, so we don't have to pack all of this in our rigs. :D

Well, the Pornstarz just got back from Fordyce 2 weeks ago. There were 14 of us and we consumed the following:

10 lbs. tri tip
3 lbs. hot dogs
2 lbs. chicken breasts
2 lbs. hamburger
4 lbs. chicken/shrimp fajitas
3 lbs. seafood gumbo
several loaves of bread
2 dozen eggs
2 lbs. roast beef
1 lb cheese
1 lb salami
several bags of chips
quart of salsa
20 cases of beer
2 gallons Jack Daniels
1 bottle Jose
1 gallon vodka
1 bottle Baileys
1 case pepsi
lots of water
gatorade
pills (not getting specific here)
lots of smokes

That was for a Fri night, Saturday, Sunday trip. Took us a couple of days to recouperate afterwards. I think we are ready for our next excursion however. :D

For lunch I usualy hit the Publix Deli and if it's just a day run I just get a Sub. Have them put the Mayo and mustard on the meat in the center so the bread doesn't get soggy and pass on the oil and vinigar. If I'm going to be out a few day's I just get some deli meat and squeze Mayo. Some assembly required :)
Usualy pick up a bag of trail mix or pringles as a side since they pack well. Plenty of Gatorade. Some dry and just mix as I need with water from the 6 gallon water jug I carry.
Dinner......I do it right. Steak! Nothing taste better than Steak when camping. Trick is to marinate it in a zip lock bag. Throw it in the freezer the night beofre you leave so it's frozen when it goes into the cooler and double zip lock bag it so no cooler water can get in or throw it in some tupper ware. Freezing the steak in the marinate is da shit! Freezing it cause the meat to tenderize and when it thaws it pulls the marinate in. It will thaw in the cooler after about 12 hours.
I got this sweet little charcoal grill at publix. It's a barrel about 10 inches in diameter about 14 inches long that is hinged with a latch to keep it closed. Great for camping. I use to have a old hub cap with some holes drilled in it I could prop up on a rock and throw a cooking grate over. That idea some of you with smaller vehicles with space constraints might like. I got plenty of room in the K5 for bigger so I just bring that little grill. Some Kingsford and your set.
Tin foil and a patato, Green beans in the can heated on the grill and you got a first class meal. You can pre heat the Patato on the manifold on the last leg to camp to get it fully cooked. Some sour cream and just like home.
Just be sure to pack a base ball bat to fend off all your buddies that dropped their weenie in the camp fire and are hungry :)

Breakfast....Some sausage and eggs sometimes green peppers and make an omlet on the old Coleman. If I got the family with me I'll make pancakes for the kids. Bisquick is kewl stuff. You can make pancakes, biscuits and other stuff with it and it. Just put a few scoops in some tuperware.
Really depends on how long out. Most of the trails around me I end up staying in a camp ground and bring my little utility trailer that I have converted into a mini camper. Bring a big cooler with all the fixing for dinner and breakfast and just do sandwiches for lunch on the trail and a small cooler for drinks. If it's cold I might heat some chicken noodle soup on the small back packing stove or even heat it while we drive on the manifold :)
Roughing it doesn't mean having to eat weenies. With planning, food doesn't have to take up a lot of space and you can make some really good meals pretty easy on the trail.
When I was a kid my folks would take us (sister and I ) camping about 4 weeks a year in 2 week shots. Get this...the family hauler was a 73 VW station wagon. We pulled this tiny little light pop up camper that maybe weighed like 600 lb and lived out of that. We went all over the place. Lived in MI at the time but usualy made a trip to CO at least once a year and a beach somewhere for the other 2 week trip. Heck we use to run down these old rail beds in CO in the old VW that now are probably so decent trails :)
Mom sure knew how to pack right and we always had a good meal. Wish she hadn't sold that old camper!

Grimmy is right on the money about the steak and potatos. Don't forget some frozen corn on the cob though. Wrap them up in foil and toss them in the fire-about 30 minutes till they are done. I usually put the spuds in, about an hour to hour and a half add the corn. 15 minutes later start the steaks. Bacon is really easy to pack for breakfast. I've also found that for sandwiches it is better to pack hamburger buns than bread as the buns are less likely to get crushed.

I used to quite a bit of backpacking. It works well with 4x4s too, becuase when you have to carry your entire campsite on your back 12 miles a day, you get good at finding recipes for things that are small and fast.

Most of our stuff was cooked on a single burner camp stove. Easiest thing to cook on the trail (cook, means going beyond my typical summer sausage and cheese diet) I'm talking about cooking an end-of-the-day meal, not an on-the-trail snack.

If you want something easy and filling, bring a can of cream of chicken soup, and a cup of rice in a plastic bag. Boil the water and add the rice, wait 5 minutes like the box says, dump in the soup and heat it up. Toss in a little basil, add some black pepper. Done.

I used to be a fishing guide in Venezuela and often spent up to a month in the outback doing primitive camping. Besides being able to load a Land Cruiser with everything but the kitchen sink, I developed a good list of camping recipes that have translated quite well to wheeling.

One thing I find absolutely necessary are the good plastic Chinese food containers, they're perfect for packing chili, Portuguese sausage stew and other similar hearty meals, and freezing them. The y stack well inside a cooler and if you pack ice tightly in between them and avoid opening the cooler except to get containers out for a meal, you can get 5-6 days worth out of the ice, depending the climate.

Like someone mentioned, I also freeze steaks and chicken breasts after marinating them, it really permeated the meat with flavor! This works especially well with flanks, skirt and tri-tip steaks, which are excellent for grilling. I usually do a dry-rub and then pack them in a good-quality ziplock, then freeze them. We usually take a small cooler that's just for letting stuff thaw, too.

For a killer wheeling breakfast, try my recipe for Southwest Hash:
Take a packet of fresh chorizo, peel the casing off (this can be done beforehand and the chorizo frozen), crumble it up over a hot deep pot and let it brown. Take the chorizo out, toss half the fat, then fry up a good-sized onion, a jalapeno pepper, and green and a red bell pepper (I pre-chop them and take them packed inside a ziplock) until the onion is translucent. Chop up a 5-lb. bag of yellow potatos into small cubes, toss them in the pot with 1/2 cup of water, tablespoon of paprika, salt and pepper (to taste) and a teaspoon of cumin and cayenne. Stir occasionally over medium heat until the potatos are soft, Serve in a bowl to hungry wheelers. Feeds about 4-5 people depending on size...
