It is a good idea to take at least one off road training and safety course before you fully dive into off roading as sport.
I took Esprit de Fours safety course at Hollister Hills OHV and learned a great deal about technique, safety and treading lightly. It was very well organized and FUN!

In the Sacramento/Central Valley I hear Capital City Mountain Goats puts on an excellent program at Prairie City OHV http://www.ccmg4wd.org/safetyclinic.htm
If you have a local Safety Clinic and Off road Training course post up here, I'm sure they have them all over the country.
