Does anyone know why my TJ's oil pressure drops to about 15-20 psi when stopped and when I'm on the gas it is about 45-50... Is it anything I need to watch out for?

TJ's oil pressure is known to go wild, don't worry about it as long as you have oil pressure. If you are really concerned about it, swap out the sending unit.

John is your TJ a 2.5 or 4.0? My 2.5 TJ drops to zero every so often then when I get back in the gas it comes back to normal. Find researching mine I found that it is a pretty common problem, So nothing to worry about, If it gets to often I think switching the sending unit will solve the problem. Just wandering
if it is only in the 2.5 liter or if the 4.0's are having the same issues. I have only read about 2.5's.

Its called RPM.

15-20 psi at idle is more than enough PSI
