I was wondering if 35-40 psi at idle hot, and 55-60 psi at ~2000+ rpm's is normal on a fresh rebuild (AMC 258)? I do have an oil cooler, so I have about 1 quart extra in the pan.

Also, how long should I wait - ring seating (iron), before doing a compression test?? Thanks!!

Thats ok pressure on a rebuild. Maybe a little low, what oil filter are you using? With Iron rings they dont seat for a while but give it a compression test and see where you are at.
