How hard is it to grind/hammer off a knuckle, and weld a new one on? Worth taking to a shop?

not hard if you can cut all the way through it. then put the nuckle in a vice and grind on it. you will see the crack all the way around when you are far enough. then hammer or press the tube out. cake

chop saw or a band saw right at the back of the "C", blow a few slots with a torch through the tube that is left in the knuckle and knock it out with a hammer. Cut to length, beat back on, set caster, and weld.
