Tom's Bronco in Medford. I am pretty sure they do general fab too?
Klamath Falls there is the "Off Road shop" Rhino liner place. They do pretty decent tube and general fab work.

I work with a guy that does some nice fab work in his spare time. He used to run a fab shop in Grants Pass but just does the work on the side now. PM me and I'll give you his number.
