Depends...

It will take longer to warm up thats for sure.
It will fuck with modern FI systems that use coolant temp to adjust pulse width.

If you have a problem with your cooling system pulling the thermostat isn't going to help any.

If your pump is low on volume I guess the loss of resistance would cause it to run cooler, but this is going to be small a amount.

If you have too big of a pump it will run through the radiator too quickly and not transfer the heat to the air thus making you run hotter, still the presence of the thermostat won't make much difference.

If you gotta do it because it stuck closed don't hesitate it will get you home. Don't do it in an attempt to fix a problem with your cooling system though.

cooler...

I have only done this in 2 vehicles, they both ran cooler all the time. First was the 76 cruiser, stock motor. It ran cool all the time, left the therm out for about 4 years. Then when I injected it, i put one back in to keep it warm enough to burn fuel easily. The other was a 86 burb with a 454. I had the therm seiaze up on a road trip. I took it out, and the thing just would not get hot. It was running at like 125deg. which made for a serious loss of power. I wound up putting a slightly less than stock one back in, like 175 i think.

I would say the best route is to use a little cooler therm. Your engine may not run as effeciently in terms of fuel burn, but it will help it last a little longer.

One thing that can happen when running w/o a t-stat is that there is a tendancy to get hot spots especially around the combustion chambers on the heads.
