Ok another simple write up.
I got the 95-97 Ford Windstar Electric fan from the local junk yard for a little under $30 It's a dual fan setup with the larger of the two having 2 speeds.
It fits the 68-72 Chevy radiator just about perfectly!

For my application I did not care to use both speeds on the main fan. I am setting it up so that the main fan runs off of the temp switch which will turn on at 200* and off at 180*. The second fan is controlled independently so that I can run it to cool the engine when the car is stopped. I also wired in a shut off on the main fan if I were to go into deep water and need to turn all fans off.

This is the fan installed

This is my diagram, I tried to make it as easy to follow as possible.
