I just got a 1990 silverado 1500 with the 5.7L V8 ran fine when picked it up and loaded it on the trailer(wrecked) plan is to swap the 8 into toyota while we throw full width axles under it, problem we are having is that the oil filter adapter keeps breaking, two so far. Oil pressure is 30 PSI at idle jumps to around 40 psi at rpm's which seems to be in normal operating parameters. I am planning on putting a live sensor on it tomorrow when I try the new adapter to just to make sure. I want to make sure the engine is in good running condition before I start ripping out the 4 banger so what the heck could be causing this. I am getting another one and new gasket tomorrow. Oh and they both broke in the same place and have replaced the oil filter twice as well. Pictures of the damage attached.

Is the oil filter coming into contact with something?

Nope well other than the seal contacting the block where its supposed to.

40 psi isn't gonna break the filter adaptor. Something is misaligned or binding

I would think the filter would break before the adapter if the pressure was the problem as well

i had a similar problem with a fuel pump on an old VW beetle. The surface of the pump was slightly wrapped from the factory. I'm talking like a few thousands of an inch off. It was just enough to cause some flex and combined with heating and cool down, it would crack. Looks like you have something similar.
