Unless you're making some serious power, I wouldn't go over a 650 cfm square bore. Q jets/Thermoquads are great when they're tuned right, but a lot of people look at the tuning process as a form of black magic/voodoo. For a while Edelbrock had a re-man Qjet available specifically for the 360 motors.

Personally, I hate holleys (I like to call them a metered fuel leak), so I'd go with an Edelbrock. No gaskets below the float level to leak, no powervalves to destroy, and very easy to tune.

I got an almost new edelbrock in a trade that I know the guy didn't tune at all it was on a worn out 360 we swapped it onto a 401 runs great even at angles and still hasn't been tuned on yet. I would buy a new one if I ever needed to.

Easy tip for the Edelbrock is to fill the crossover passage between the float bowls with cloth or something to keep the fuel from running downhill.

if you can get a Q-jet dialed in, they are very hard to beat from a drivability standpoint, and they run better than the rest at crazy angles. they respond best during moderate throttle "tip-in". which translates to no stumble. from a performance standpoint i prefer the AFB/Edelbrock. super easy to tune. good drivability. no leaks. dependable. holleys work well on the street, but they require just as much voo-doo as a Q-jet to get dialed. and they do leak. EFI FTW!

I one I was looking at is around 1700 bucks but depends on how big you go and other opitions you get with it.
