I saw one guy with a 'Burb take the interior skins off his doors and cut up the sheet metal and make a compartment in there.
Seems like a good idea, but you'd want to roll any sharp edges, or somehow keep them from being too sharp. (You have kids riding in the back seat right?)

The other thing i was thinking about with this setup is cold weather with this setup...
Metal conducts the cold pretty good, I wouldn't want to have to sit next to a bare metal door for very long if the outside temps were below freezing.
