Sounds like you don't have the capacity to handle the task. Send it to me and I'll fix it up right. Oh, and I'll also keep it as a fee.

I have/had (selling on GB now) a single stack that I wanted to do this to as well. However, I think that it requires a certain number of US made parts in order to convert it to double stack.

wrong. its already a "US" gun

OP: get a bunch of assorted AK mags (not the US made ones whatever you do) and grind/file the magwell wider to fit.
grind
fit
grind
fit

Right.

And once you get it close, put the dremel down, and grab some hand files. It's way too easy to take off too much material, and it's very difficult to add it back on...

x30

Lots of idiots, I mean dedicated enthusiasts, have fallen victim to the "I can finish it with the dremel" error. Some around here even. Ahem...

The way to fix that (I have fixed 2 of them for other people)

cover the top of an AK magazine with plastic wrap
rough up the inside of the magwell and dimples with a cut-off wheel
smear a bunch of JB quick into the inside of the magwell and on dimples
insert plastic covered mag
let semi set and cut away from the inside any JB Quick that is on the top of the magazine
let completely set and then remove magazine, remove any problematic JB weld
