If you love carrot cake..

Here is my moms recipe. She won an award for this when I was little, I remember I wanted to eat all of the cake and they wouldn't let me

I omit walnuts because I hate them, but this is by far the best carrot cake I have ever had.

Enjoy.

CARROT CAKE - icing below also

2 c. sugar
1 1/2 c. vegetable oil
4 eggs
2 c. flour
2 t. baking soda
1 t. baking powder
2 t. cinnamon
pinch of salt
3 c. grated raw carrots
1 c. chopped walnuts
1 c. raisins
(sometimes I also add crushed pineapple)

Combine sugar, oil & eggs in a large bowl, mix until well blended.
Sift in flour, baking soda, baking powder, salt & cinnamon.
Add carrots, nuts & raisins.
Bake at 325 degrees for 30 - 40 minutes.
**makes 3 layers or 1 large oblong

Icing:

Oblong -

1/2 lb. powdered sugar
4 oz. softened cream cheese (not the tub)
1 t. vanilla (pure from Mazatlan)
1/4 stick soft butter or margarine

Double the above for layers.

I usually break my batches up into 3 shallow 5 x 7 loaf pans.

Nice even bake time and leaves the center PH moisture while providing a good top crust pop.
