What all do they work well when used for? How thick ? how do they deal with heat?

They can be used for any kind of fabrication work. The leather is thin enough that you can accurately TIG weld with them on (especially if you remove the extra finger tip layers on the rod hand). But it is also strong enough to stand up to daily use.
As for heat resistance, they do not have any kind of heat resistant material in them, so I wouldn't grab anything extremely hot, but they are better than using your bare hands

Considering that the Mechanix version is too damn hard to find, it makes this deal even better. I'll try a pair...my welding gloves are giving me problems as it is.

Sure can. A friend and I used them last night when welding up shock and lower control arm brackets on my drag car.

Yep...these gloves are stout. Not too stiff, but enough to handle warm steel. Me likey alot.
I just need to get another sticker, because if I only put one on my truck, it'll lean to that side.
