Help! My oil in my turkey fryer doesnt rise above the turkey

Happy Thanksgiving to all, can I wrap a brick in foil and add it?
Any other suggestions would be gladly appreciated!!

Dump in a gallon of water. The water needs to be near freezing. Make sure the oil has a nice rolling boil.

if you've got space, either a block of ice or a brick would probably work

I've never fried a turkey in my life

doesn't help you now, but next time wrap the turkey, then add the oil, then remove the turkey, unwrap while the oil heats and re-add turkey. Now if you add more oil it is going to be cold and not come out the greatest

Wound up using a decent set of tongs to push the drumstick tips below the oil level as it cooked.
Was super crispy, and with the motor oil reduction sauce, we were not disappointed!

We brined and smoked one on Wednesday, then deboned it on warmed it back up for Thursday.
We also brined and baked one on Thursday, next year we'll probably skip the baked one and just do the smoked one as everybody loved that.
One of these days we need to try a fried one, haven't tried that yet but we have everything we would need to do it.
