I was looking it up in Nevada DMV codes, and all it says is you must have a mirror that you can see 200 ft behind you in. But it doesn't say it has to be outside. I'm just wondering if I'm legal with the doors off.

Just last week I asked my first cousin, Mike, that question. I seems that in New Mexico you only need one mirror. And according to him flair coverage isn't a problem nor is having a windshield or not as long as you don't have a broken one and you don't need doors either.

I asked CHP and they said for Cal. you must have two functional mirrors on must be the drivers side miiror and then its your option as to the other one. I also had that confirmed by Stanislaus Sheriff.
