Which one is worse for off camber and rough off roading? I need a new carb since mine almost turned into a big campfire, i want a holley and was looking at one with center hung floats. How bad are they and how hard is it to make them good?

Holly's just plain blow for offroading. (personnaly the blow period).
Get a Quadrajet.
They recently did a Carb test on Rick Pewes (sp?) Flatty with a GM engine in it. The quad was the ONLY carb that ran right and would run off camber. Ithink that even included the new holly. I think the best one I believe is the 1405 (double check that number) in Jegs and Summit. It's the one with the electric choke. Don't let the 795 CFM thing scare you. Quads self adjust to the engine. if your ening can only run 500 cfm then that all it will feed it. That's how come you can take a quad off a 305 and bolt it on a 455 and other than idle mixture it should run fine.
You will need a Oil pressure switch also . Look in the fuel section and there is a switch that will work fine that they sell to cut the fuel pump if the engine dies.
What the switch does for it you is makes sure the choke can not cycle till the engine is running. That way you don't acidently run down your battery or if you leave it in run without starting the engine id doesn't open the choke till the engine needs it.

I agree with Grim, Holleys just blow off-road. If you can't afford or don't want to deal with getting a TBI set-up, then a Q-jet is the next best thing. They have really small primarys, so you get awesome throttle response and they don't slosh over bumps and in off camber situations.
I didn't know about the oil pressure switch for the choke though. Now I have to go out and rewire my choke, Thanks Grim <IMG SRC="smilies/biggrin.gif" border="0">

it is a design problem with no solution
the location of the float pivot might have some effect,
but it is the location of the fuel in the bowl that causes problems.
as soon as you start to climb the fuel in the bowl becomes higher than the main discharge nozzels causing the fuel to gravity feed through the main jets basically drowning your engine. flooring it may keep it running but isnt very graceful and it smokes like a diesel. restarts are difficult at best if you dont hydraulic it. a holley model 4360 has quadra bog style fuel reservoir and would work better perhaps as the fuel would fall to the other end of the carb rather than flow out the main circuit, might starve the jets though.

If you want to junk yard the part any GM V8 or V6 with electric choke (80-87) will have it. The switch will either be T into the Oil fitting behind the distributor or the one above the oil filter. the plug will have 2-3 depending on if it had the mix control carb but the switch will have 2 terminals. If it has a single terminal then it a idiot light of a gage sender. This swith is not much bigger than the single terminal swtich used for the idiot light.

Actually i am looking at this 900CFM Holley 4 barrel throttle body. Maybe instead of building another engine i'll just put this on the engine i have for now. It sounds like the whip $hit.
