I belive the Icelanders use som form of Jeep flares.
The problem when widening a Defender is that you loose 3" each side when you remove the eyebrows, so you need really wide flares to make any difference.
Try extending the existing ones by adding a few inches of aluminium or black plastic between the fenders and eyebrows. It has been done, and seems to work fine. Cheap, too.
