Everything from the flexplate back will work with the 350; the diesel 700R4 uses a different torque converter and governer, but can be used in a pinch. As long as you get your fuel tank drained pretty well, you can still use it, too. If you use the diesel radiator, you will need a flex upper hose to compensate for the difference in motor to radiator relationship. You can (obviously) swap in a gas motor radiator, but the trans cooler lines are on the driver's side, rather than the passenger in some applications, so watch out for that. The diesel wiring will be a bit longer, but all of the functional wiring will work the same (alternator, starter, pressure switches). All you will need to do to wire up the distributor is get an HEI pigtail and splice it onto the injector pump wire (switched 12v). If I can think of anything else, I will post up...that is all I can recall from my swaps right at the moment.

Yep, you can pick up the converter at any trans shop, or (of course) Jegs, Summit, et al. I have found the governors on Ebay and the like, fairly cheap.

The only wiring I recall (right off hand) that you can just yank out and throw in the trash is the glow plug wiring (along with the solenoid). Mine were all in a nice little harness, and I just junked the works. Everything else I traced from it's point of origin to the fuse block, but I don't recall if I junked anything else or not. Sorry. The injector pump wire runs right to the pump on the manifold; it's just a switched 12v wire. Same guage as the HEI wire. The pigtails can be snagged new at Autozone, Napa, or wherever you choose to purchase.
