you should always drain your oil immediately after filling your crankcase with water.
Cause unless you drowned it in the bathtub, chances are there is going to be dirt in the water, something you don't want getting in between your bearings and crank.
So, if you drove the truck for a while after getting water in your crankcase, you might have accelerated your rod and main bearings from the crap that is now in your oil, resulting in your reduced oil pressure.
